Gorgeous bread at Forn Pes de sa Palla

All breads at Forn Pes de sa Palla are made with their own sourdough, which comes from organic grapes and respects the times and temperatures of natural fermentation.The flour used is grounded by stone and the ingredients are Km 0.
Mallorca sea salt, tomatoes, olives and virgin olive oil of arbequina and koroneiki varieties that come from the organic farm of Esment Alimentació. Produced in a traditional way with an innovative and quality result. They are breads that smell, taste and last. Forn Pes de sa Palla belongs to Esment Alimentació.
A delicious place.
Forn Pes de sa Palla has a history linked to the world of bread. It occupies the same place where during the 1940s Rafael Vaquer Juliá’s bread factory was located. Today it is next to the Cafè Pes de sa Palla, the first restaurant managed by Esment Alimentació more than 20 years ago. At that time, the Cafè was a pioneering initiative at European level in the insertion of people with intellectual disabilities.
As in the rest of Esment Alimentació projects, Forn Pes de sa Palla is formed and gives socio-labor opportunities to people with intellectual disabilities. Their activities related to gastronomy and food allow the incorporation of people throughout the process and their participation contributes the highest added value to the product.
The team incorporates technology that facilitates the processes: fermentation, cooking, refrigeration, maintenance … The team, formed by 22 people (16 training), is directed by the cook and trainer, Óscar Martínez.The consultant of the global project is the chef and Best Artisan Master of Spain winner, Oriol Balaguer.

Majorcan Top Chef

After a tight and exciting finale chef Marcel Ress, born German but with a Majorcan heart, won the coveted Top Chef title in the third edition of Antena 3 TV program.

Since the beginning of his career and his name has been linked to to some great chefs. First as Chef de Partie / Junior Sous Chef at Sporthotel Alpin in Austria and then as Chef de Partie at Restaurant Bachus Reads Hotel Relais & Chateaux (awarded with aMichelin Star).From the Kristall Restaurant in Wenberg (with two Michelin Stars) to the moment he received a call from Mallorca. Simply Fosh restaurant offered him a job. He landed in Palma in April 2009 where he took over the kitchen of Simply Fosh with the goal of someday achieving a Michelin Star. In November 2014 he fulfilled his dream … and it was just the beginning.

Originally from Unterwaldbehrungen, Germany and now a resident in Mallorca this young chef won the audience’s heart during the program. Nowadays he is getting used to the fact that his fame has suddenly multiplied as today’s chefs are not only known for their performance. They are the new media celebrities everyone wants a selfie with.


Due to this recent award come some inevitable decisions about his future which, for now, continues in Mallorca. Despite receiving multiple offers both on mainland Spain and Germany the island still is his first choice. He has accepted a position as Master Chef in the Cooking Academy of the German company in Mallorca Villa Wesco Wesco Cooking leading the Ress project. In both cooking courses and training on certain important cultural and gastronomic aspects will be offered.

The German decoration brand is about to open its new facilities in March in a former mansion of Santa Maria meant to be a culinary, gastronomic and cultural center of reference. We can not wait for the opening day.

In Mallorca we have a whopping 7 Michelin stars. Andreu Genestra is one of those stars shining bright on our sky.

This young chef born in 1983 began scrubbing pots and pans when he was 15, then studying hospitality at 16, working in luxury hotels on the island and later on in Condes de Barcelona Hotel. He returned to his homeland to work and learn under the command of Marc Fosh at the Read`s hotel where he firmly cemented the bases of his cuisine. Hence the hotel Son Brull, were he was trained on Mallorcan finest cuisine and Espai&Sucre, which opened his eyes to the creativity of the world of desserts.

In 2008 he landed in Ferrán Adria’s Bulli … a restaurant out of this world. Product, creativity, innovation .. In short, the best restaurant in the world in 2002, 2006, 2007, 2008 and 2009. Any young chef’s dream.

Chef of the restaurant El Pi de Formentor Barcelo for 3 seasons, with winter stays in Europe and America, experience in Kuwait in hospitality businesses belonging to the Royal Family … and finally his own restaurant.

In April 2011, Andreu Genestra restaurant opens its doors at the hotel are Jaume II in Capdepera, Majorca. After only three years the Michelin guide gives him a star and the Repsol guide recognizes its quality with a  Sun.



6,000 square meters of kitchen-garden provide the restaurant with local Mediterranean vegetables. A lovely setting to sample dishes and taste Mallorca in every bite.
